Barley earns its place in school food service

Barley has been rediscovered in its use for food service as a result of increased interest in natural grains and high fiber foods. Five school food service programs tested recipes for the North Dakota Barley Council. The method of preparation, use of commodity foods and acceptance of the recipes were discussed. A nutritional discription of barley is provided.
