Biological availability of Beta carotene from fresh and dried green leafy vegetables on preschool children

The biological availability of Beta carotene from fresh and dried forms of fenugreek and drumstick leaves to rural preschool children in India was studied over two and a half months. Supplementation resulted in an increase in the concentration of serum vitamin A levels irrespective of the source of supplement. The Beta carotene absorption obtained for children receiving fresh fenugreek leaf preparations was greater than in groups receiving dried preparations. Absorption from fresh fenugreek supplementation was greater than that from fresh drumstick leaves.
