Effect of ultraviolet radiation on physiological and biochemical properties of yeast Saccharomyces cerevisiae during fermentation of ultradisperse starch raw materials

Study of correlation between the pretreatment with ultraviolet of yeast on the efficiency of further fermentation of wort obtained from ultrafine grain particles to ethanol.Investigated three races of industrial yeast Saccharomyces cerevisiae (native and irradiated by ultraviolet). In all variants were tested physiological properties during fermentation of starchy wort. Was shown that activation of the yeast by ultraviolet radiation allows to further increase the ethanol yield at average 25% compared with the native yeast races when using of a thin (up to micro- and nano-sized particles) or standard grain grinding.Using a mechanical two-stage grinding of starchy raw materials and ultraviolet pretreatment of yeast was increased the efficiency of following saccharifying of starch and fermentation of wort to ethanol.
