Anthropometric assessment (height, weight, skinfold thickness), dietary assessment; biochemical assessment; and clinical examination of the elderly are reviewed in this chapter. U.S. surveys of noninstitutionalized elderly are summarized (Health and Nutrition Examination Surveys, Ten State Nutrition Survey, etc.), and problem nutrients (energy, protein, cholesterol and triglycerides, iron, vitamin A, vitamin C, B vitamins, calcium, phosphorus, zinc, and trace minerals) are discussed.
