Factors differentiating participants and non-participants of the National School Lunch Program. I. Nutrient intake of high school students

Nutrient intake was assessed and compared in 104 participants and non-participants of the National School Lunch Program, to determine the nutrient contribution of school lunches. Dietary recall interviews indicated that participants had better diets; school food service appears to positively influence students' food habits and nutrient intakes. Snacking is a regular eating pattern of these adolescents and contributed to nutrient intake. Quality and quantity of snacks helped determine the nutritive value of teenagers' diets. Differences in food preferences and food acceptance between participants and non-participants and the influence of lunch habits on whether breakfast is eaten, permit analysis of adolescent food behavior. Nutrition education programs designed to improve the food habits of teenagers are recommended.
