Managing foodservice training. II. A learning model

The following four-step "applied learning model" proposed by Goldstein and Sorcher is recommended by the authors for its cost effectiveness in employee training: 1) present the best possible (rather than the easiest) demonstration of the desired behavior to the employee; 2) provide actual practice of the skill or behavior; 3) reinforce the skill through individual or group feedback; and 4) provide opportunity for transfer of training to the real work setting. Examples of the application of the model are given and charts show advantages and disadvantages of possible presentation methods.
