Dietary guidelines and the food industry

The food industry is challenged to produce saleable food products which are also nutritious. The nutrient content of the American diet is more and more the responsibility of the commercial processor rather than the consumer who buys and serves food at home. Exposure to an increasing variety of food items, as well as to promotional advertising, makes it more difficult to select nutritious foods. USDA-HEW Dietary Guidelines recommend moderating intakes of fat, saturated fat, sugar, salt, cholesterol and alcohol, and increasing consumption of fruits, vegetables and grains. These recommendations should maximize public health benefits and minimize risks of chronic disease for the greatest number of people. However the acceptance of these dietary practices by Americans depends on industry efforts to help the public make nutritious food choices.
