A speculative report examines genetic engineering of bovine and other caseins in designing more nutritious and functional food proteins, and attempts to anticipate the effect of the genetic engineering of food proteins and enzymes on exclusively interactions of food scientists with molecular biologists and geneticists. Topics include: the 6 steps involved in site-directed genetic engineering of a protein; research progress and procedures for cloning casein DNAs (from rats, bovines, etc.); and the potential for casein engineering.
