An overview article discusses the growing international use of microwave food processing, its rationale, the equipment employed, and microwave food processing applications. Specific attention is focused on some of the more important processes and equipment being used; viz.: tempering, cooking, dehydration, baking, pasteurization, and sterilization. Each of these areas is separately discussed. Other processes that have potential for adoption to microwave processing also are discussed. Illustrations of the various types of equipment used are included.(wz)
