Quest for convenience: a matter of time

This article will discuss two related economic forces driving the quest for convenient food: rising incomes and the high value of time. How these have changed the consumer's allocation of time and food consumption and how they help to induce technological changes in the food industry are examined in the context of two well-known economic theories. Observations on the evolving allocation of the consumer's time, labor-force participation, and lifestyle that reinforce the quest for convenience precede a final discussion about the affect of highly valued time on the demand for information and government regulations on food.
