The hygiene legislation applying to dairy products in the European Union changed from 1 January 2006 with the revocation of the Dairy Hygiene Directive 92/46/EEC. The main new regulations are 852/2004 and 853/2004. The new requirements apply from primary production to retail, and lay down that food business operators are responsible for the safety of their products. Food business operators must apply HACCP principles. The requirements for the dairy industry at primary production and processing are considered in detail, with the main changes from Directive 92/46/EEC identified.
