Eating healthy to save hearts

The Culinary Hearts Kitchen Course is a six-part program developed by the American Heart Association (AHA), New York City Affiliate to teach the public how to put AHA dietary recommendations and food plan guidelines into practice. The course, designed to be taught by a dietitian or nutritionist, teaches participants to plan, select, and prepare meals and to modify recipes to meet AHA recommendations. Guidelines are provided for modifying recipes by 1) changing a food preparation or cooking technique and 2) making a change in a recipe ingredient (reduction, elimination, substitution). Specific suggestions are included for adjusting recipes 1) to reduce cholesterol or saturated fats, 2) to reduce calories or total fats, and 3) to reduce sodium. Recipe modification principles are illustrated using a typical lasagna recipe.
