Influence of modified atmosphere packaging on the competitive growth of Listeria monocytogenes and Pseudomonas fluorescens on precooked chicken

This study was designed to determine the influence of modified atmosphere packaging on the competitive growth of Listeria monocytogenes and Pseudomonas fluorescens on precooked dark-meat chicken nuggets during low temperature storage. The two bacteria were inoculated alone or together on nuggets and stored under air and two modified atmospheres 76% CO2:13.3% N2:10.7% O2 [identified as modified atmosphere 1 (MA1)] or 80% CO2:20% N2:0% O2 [identified as modified atmosphere 2 (MA2)] at three temperatures (3, 7 and 11 degrees C). When the two bacteria were grown in mixed culture, growth of L. monocytogenes was stimulated at 3 degrees C by the presence of P. fluorescens in air and MA1 but not MA2. This growth stimulation was absent at the higher temperature. P. fluorescens was generally unaffected by the presence of L. monocytogenes at 3 and 7 degrees C regardless of the atmosphere. However, at 11 degrees C growth of P. fluorescens was inhibited during the early stages of incubation in air and MA2. Conversely, inhibition of P. fluorescens by L. monocytogenes at 11 degrees C occurred during the latter stages of incubation in MA1.
