Professionally planned kitchens, using the services of a kitchen designer, can save school districts time and money. Kitchens that are not designed to meet the needs of the foodservice operation and personnel usually result in inefficient and uneconomical use of equipment. Kitchen designers are specialists with specific knowledge of food preparation, nutrition, sanitation, labor, equipment, and product needs. This expertise is often lacking in the architects, mechanical engineers, and foodservice managers who plan most school kitchen facilities.
