The terms ripeness and maturity relate to the time at which a commodity is in the appropriate state for harvesting and for eating. The factors involved in this process are often complex. Changes in the chemical composition and physical structure of fruits during ripening and of vegetables during maturation are detailed. The way volatile compounds affect the aroma are also examined. A graph shows changes associated with the ripening of apples.
