Cost management becomes byword for beleaguered hospital foodservices

Extract: Paralleling contracted management of single hospital departments, in some ways, is contracted management of entire hospitals. Proprietary hospital companies, having demonstrated advantages of businesslike management over less cost conscious, nonprofit management, moved into management of hospitals they do not own in the early 1970s. Cost containment legislation is expected to increase contract management business. In some cases hospital management companies are subcontracting their foodservice departments to foodservice management companies.
