A "Food Service Marketing" Gallup survey conducted in 1977 revealed that 68% of all men who eat out like to eat at steakhouses; in a telephone survey done in July 1979, restaurateurs said men prefer beef. Smaller portions, and fish, quiche, salad, and omelette selections are preferred, however, by many male restaurant and airline customers. Other restaurants, most notably chains, assume that men still like quantity. The New York City-based Healthworks has catered to salad lovers but has attracted primarily women. In order to expand both the dinner market and the male market, hot sandwiches and casseroles were added. Jimmy's Place in Chicago sent opening invitations to men only, since they are better customers, according to the owner. The menu has a mix of Japanese and French cuisines, and the atmosphere is conducive to business meetings and serious eating.
