Examination of the lemon peel maceration step in the preparation of lemon liquor

English. The kinetics of the alcoholic extraction of essential oils from lemon peel, for the preparation of lemon liquor, can be carried out by means of spectrophotometry UV-VIS or by gas chromatography. The spectrophotometric technique is able to determine the kinetics of the extraction of the total components in the essential oils, while the gas chromatography technique is able to follow the extraction of the single components. The curve representing the kinetics of extraction of the essential oils obtained spectrophotometrically has the same trend of the curve of the single major components obtained through gas chromatography. At room temperature, the components found in a larger concentration reach equilibrium after 24 hours, while those in minor concentration are completely extracted after 3 to 4 days. La cinetica di estrazione degli oli essenziali dalle bucce di limone mediante etanolo, per la preparazione dei liquore di limone, puo' essere seguita sia mediante spettrofotometria UV-VIS, sia mediante gas cromatografia. La tecnica spettrofotometrica e' in grado di seguire la cinetica di estrazione dei componenti totali, mentre quella gascromatografica consente di seguire la cinetica dei singoli componenti degli oli essenziali. Le cinetiche ottenute spettrofotometricamente seguono lo stesso andamento delle cinetiche dei componenti maggiori ottenute per via gascromatografica. A temperatura ambiente i componenti presenti in maggiore concentrazione vanno all'equilibrio dopo 24 ore, mentre quelli minori sono estratti completamente dopo 3-4 giorni. Viene inoltre proposta una metodica che permette di seguire la cinetica di diluizione dell'etanolo da parte dell'acqua contenuta nelle bucce
