unknown. The total phenolic content, antioxidant and antimicrobial of natural red colorant from pokeberry (Phytolacca americana L.) fruits were investigated. The colorant was found to contain a quite large amount of phenolic com- pounds (16.0%). It exhibited high antioxidant activity (2.5 [Fe2+] mM per 1 g/l sample) and antimicrobial activ- ity against Staphylococcus aureus, Escherichia coli, Candida utilis and Pseudomonas aeruginosa. The colorant revealed high potential to color various food products. The natural red colorant from pokeberry fruits with anti- oxidant and antimicrobial activities and high coloring ability may be used in the food industry as a biologically active natural food additive.
