Slaughter characteristics and chemical copmosition of the meat from Japanese quail (Coturnix Coturnix Japonica)

The aim of the study was to make an analysis of the content qualytative parameters of the meat erom the Japanese quals originating from the specialized meat breed Pharaoh. With increase of age the slaughter output decreased, the tendency being more obvious for females (p0.05). The percentageof boneles meat (meat from the breast and legs) decreased with age at average of5.4% (p0.05). The concentration of the hydrogen ions (pH24) in the meat obtained from the breast had lower values (p0.001). Differences between sexes were also observed - females had higher values of pH24. Between the 31st and the 35th day of age the lipid content increased with 28% at average, even the cholesterol in the carcass meat increased 7.1% at average. The amino acids content was not influenced considerably by the duration of fattening. The ratio essential: dispensable amino acids was within the bounds of 1:1.52 to 1:1.54. The limiting amino acids lysine and methionine were 11.8% of the protein in the quails meat.
