English. The oil initially obtained upon harvesting the fruit of the oil palm is red in color due its content of carotenes, tocopherols. In the course of processing the compounds imparting the red color are removed and the commercially available oil is RBD (refined, bleached and deosorized) palm oil which is pale in color. The red palm oil has potential to be a very important nutrient. Its content of tocotrienols and tocopherols makes it a unique dietary fat. More studies in man and in experiemental animals are needed to establish the role of red palm oil as healthful addition to the human diet

En el curso del procesamiento se eliminan los compuestos que le dan el color rojo y el aceite que sale al comercio es aceite de palma RBD (refinado, blanqueado y desodorizado), el cual es de un color amarillo pálido. El aceite de palma rojo tiene el potencial para ser un nutriente muy importante. Su contenido de tocoferoles y tocotrienoles lo convierte en una grasa alimenticia única. Se requieren más estudios sobre humanos y animales experimentales para determinar el papel del aciete de palma rojo como saludable adición a la dieta humana
