This work was done aiming to select the best thin-layer drying kinetic parameters. It was used a bed dryer and the drying air was heated by electrical heater. Four air drying temperatures were studied (40, 50, 60, and 70 deg C), combined with two air velocities (1.0 and 2.0 m/s). There were tested twelwe drying equations. Based on the results obtained, it can be concluded that a criterion based on a single statistic or even two parameters is not enough to chose the best thin-layer drying model for Ocimum basilicum L. The selection criteria proposed herein allowed obtaining of a specific model, among twelwe others, that really better represents the drying of basil. It was found also, that the logarithmic model was the best one considered to be able to describe the thin-layer drying of basil, according to the selection criteria adopted above.
