Modern model of rural areas development emphasises products of high quality with added value. Such products have particular importance in areas where intensive agricultural production is restricted by poor climate and natural conditions. This product uniqueness leaves no visitor of Herzegovina indifferent, and it could possibly become a driving force of rural development of this region in the future. Research has been carried out on the municipality of Nevesinje by interviewing its oldest cheese producers. The subject of this research was original technology of cheese in a sack. Results lead to the conclusion that production of cheese in a sack is as old as cattle breeding and presents a part of this area population identity.
