[Functional long-term storage products]

Sublimated dried food concentrates (SFC) were chosen to develop of functional long-term storage products. They are made by the factory "Bioritm". For the persons with excessive physical activity powder SFC were suggested, the last have vegetative origin: beetroot juice, cabbage juice, nettle, apples, carrots, toponambour, glague. The widely spread in Russia strains of Bifidobacterium and Lactobaterium were used as probiotics. It was shown that the required bacteria titre was saving during 18 months in the products received. The pasta, containing glague SFC and "Veteron" preparation as 2% solution of beta-carotin, was developed for the persons resident in unfavorable regions, working under detrimental to health conditions and for elderly persons. Glague has nutritional, biological and medical characteristics due to the contained bioactive substances, required to the mentioned contingent. The amount of the sublimated glague was 5 and 10%, the amount of beta-carotin was 3 milligram per gram of the flour. The research works showed high keeping quality of the vitamin C and beta-carotin during 12 months. Gluten-free functional products, such as ready cooked porridge and cereal snack with rice, maize and buckwheat were developed for the persons suffering from gastrointestinal tract diseases, particularly celiac disease. Lactulose, inulin, soybeans oligosaccharides were included in the structure of the products. As phospholipid agent soybeans lecithin, that is the main protector of nerve cells, was used (80% of persons suffering from celiac disease have neurological complication). The mentioned products have taste and flavor additions: sublimated carrot and strawberry juices, folic acid, beta-carotin. The traced assays have no gluten and the assays of buckwheat-rice cereal content 11 milligramm gluten per 1 kg ( the standard contents is less than 200 milligram).
