The development of recipes of sweet liqueurs with extract and juice from cloudberries fruit

The development of the compounding of sweet tinctures with use of extract and juice from wild-growing fruits of cloudberry and definition of physical and chemical and organoleptic indicators of the obtained drinks were the research objective. Collecting raw materials was made in the Turukhansky area of Krasnoyarsk region in the period of fruits’ technological ripeness (August). Three compoundings of sweet tinctures on the basis of cloudberry fruits were developed: Imperial cloudberry, Cloudberry with mint, Cloudberry with lemon,. Cloudberry juice, alcoholized infusion of cloudberries, alcoholized infusion of a peppermint, alcoholized infusion of dried peel lemon, sugar syrup, lemon acid (for finishing acidity of 0.3 g/100мл), ethyl alcohol of the Luxury brand, water were a part of the compounding of tincture. At the first stage prepared components for a blend. Further, after preparation of all components blends were prepared. After introduction of each ingredient the blend was mixed within 5 minutes. After hashing the blend was filtered on a filter press. After the filtration the tincture was spilled in the prepared glass container. The strength of drinks was 20%, the contents (g/100 cm) of: the general extract - 26–28, sugar - 25, acids in terms of lemon acid - 0.44–0.60. All these organoleptic and physical and chemical indicators meet the requirements of State Standard P 52192 "Distilled products. The general specifications". After organoleptic assessment the samples received 22.8-23.3 points from possible 25, it is shown that they meet the requirements of State Standard P 55313-2012 "Ethyl alcohol from food raw materials and alcoholic drinks. Methods of the organoleptic analysis". The offered compoundings will allow expanding the range of sweet tinctures and receiving the drink enriched with biologically active agents contained in cloudberry fruits.

Целью исследования были разработка рецептуры сладких настоек с использованием экстракта и сока из дикорастущих плодов морошки и определение физико-химических и органолептических показателей полученных напитков. Сбор сырья производился в Туруханском районе Красноярского края в период технологической зрелости плодов (август). Были разработаны 3 рецептуры сладких настоек на основе плодов морошки: Морошка царская, Морошка с мятой, Морошка с лимоном. В состав рецептуры настойки входили сок морошки, спиртованный настой ягод морошки, спиртованный настой мяты перечной, спиртованный настой цедры лимонной, сахарный сироп, лимонная кислота (для доведения кислотности 0,3 г/100мл), спирт этиловый марки "Люкс", вода. На первом этапе готовили компоненты для купажа. Далее, после подготовки всех компонентов, готовили купажи. После внесения каждого ингредиента купаж перемешивали в течение 5 минут. После перемешивания купаж фильтровали на фильтр-прессе. После фильтрации настойки разливали в подготовленную стеклянную тару. Крепость напитков составила 20% об., содержание (г/100 см): общего экстракта 26–28, сахара 25, кислот в пересчете на лимонную кислоту 0,44–0,60. Все эти физико-химические показатели соответствуют требованиям ГОСТ Р 52192 "Изделия ликероводочные. Общие технические условия". При органолептической оценке образцы получили 22,8-23,3 бала из 25 возможных, показано их соответствие требованиям ГОСТ Р 55313-2012 "Спирт этиловый из пищевого сырья и напитки спиртные. Методы органолептического анализа". Предлагаемые рецептуры позволят расширить ассортимент сладких настоек и получить напиток, обогащенный биологически активными веществами, содержащимися в плодах морошки.
