Comparative estimation of technology of processing frozen and fresh root crop of sugar beet | Сравнительная оценка технологии переработки замороженных и свежеубранных корнеплодов

English. The experimentations were held in January, 2017, on one of the facilities of Ulyanovsk region. The object for research was root crops of sugar beet which has been produced on fields of Cilninsk and Ulyanovsk areas according to developed technology of cultivation and root crops from the nearest areas of Tatarstan and Chuvashiya Republic. For production of frozen beet chips the technological parameters of beet cutting machine and diffusion apparatus were changed. The thickening of chips produced by beet cutting machine in January allowed to reduce amount of a defective chips (length being less than 1 cm), that is why amount of a spoilage did not exceed 3%. In January the increase of water temperature in diffusion apparatus allowed to reduce defrosting time of sugar beet cells and to reduce portion of sucrose transition into invert sugar. Due to change of technological parameters of the beet cutting machine and the diffusive apparatus the profit from processing of the frozen sugar beet in January was 7854 rub per 1 t of white sugar which was less than October indicators just by 1576 rub (profitability was 27.1% and 34.5% respectively). The enhancement of technological parameters of sugar beet processing promote cost reduction for raw materials and components, as well as repair of the main equipment and expenses for the electric power for production of 1 t of white sugar. As a result the portion of defective chips is reduced and the sucrose transformation into invert sugar decreases, thus the technological qualities of raw material are saved, and the decrease of sugar output is insignificant.

Russian. Опыты проводились в январе 2017 г. на базе одного из заводов Ульяновского региона. Объектом исследования были посевы сахарной свеклы, выращенные на полях Цильнинского и Ульяновского районов по разработанной технологии возделывания, и корнеплоды с ближайших районов Республики Татарстан и Чувашии. Для получения замороженной свекловичной стружки изменены технологические параметры свеклорезки и диффузионного аппарата. Утолщение стружки в свеклорезке в январе позволило сократить количество бракованной стружки (длина менее 1 см), поэтому количество брака не превысило 3%. Увеличение температуры воды в январе в диффузионном аппарате позволило сократить время на разморозку клеток корнеплодов и уменьшить процент перехода сахарозы в инвертный сахар. Благодаря изменению технологических режимов работы свеклорезки и диффузионного аппарата прибыль от переработки замороженной сахарной свеклы в январе составила 7854 руб на 1 т белого сахара, что оказалось меньше показателей октября всего на 1576 руб (рентабельность соответственно 27,1% и 34,5%). Повышение технологических показателей сахарной свеклы способствуют снижению затрат на сырье и компоненты, затрат на содержание и ремонт основных средств, затрат электроэнергии на производство 1 т белого сахара. В результате снижается процент бракованной стружки и уменьшается превращение сахарозы в инвертный сахар, при этом сохраняются технологические качества сырья, и выход сахара уменьшается незначительно.
