Изучали особенности дифференцированного воздействия пенициллина (НП) и левомицетина (ЛВ)на микроорганизмы молока и его химический состав, а также начистые культуры промышленных штаммов молочнокислых бактерий (МКБ) Streptococcus salivarius subsp.thermophilus (МКБ1) и Lactobacillus delbrueckii subsp. bulgaricus (МКБ2). ПН вводили в опытные образцы (ОО) молока в концентрациях0,002; 0,004; 0,008 и 0,016 мг/кг, а ЛВ - 0,00015;0,0003; 0,0006; 0,0012 мг/кг.В контрольные образцы (КО) антибиотики не вносили. Молоко и хранили, и сквашивали при температурах 24 и 37 град. C. В КО и ОО определяли общее микробное число (ОМЧ), а также время достижения электрического импеданса(уровень сопротивления среды, соответствующий началу стационарной фазы развития микробной популяции). В процессе изучения физико-химических показателей молока и заквасок использовались стандартные методики и современноеоборудование (Bentley 2000 и Somacount 300). Показали, что на ОМЧ и на время достижения импеданса при хранении молока,а также на КМАФАнМ в процессе его сквашивания, в большей степени оказывала влияние температура, а не концентрация ПН и ЛВ.МаксимальныйпоказательОМЧ (2,5*10E6 КОЕ/мл) отмечен в КО при t 37 град. C. С увеличением концентрации ПН в ООзакваски,по сравнению с КО, возрастала массовая доля белка, лактозы и сухого вещества. В ОО закваски МКБ1 с концентрацией ПН 0,016 мг/кг,по сравнению с другими ОО, значительно увеличилось время образования сгустка.В ОО МКБ2 отмечена лучшая сохранность жира (0,66–0,72%). В процессе метаболизма МБК1 жир в субстрате расходовался интенсивнее, его концентрация в супернатантах составила 0,36–0,42%. Итак, установлены особенности дифференцированного воздействия отдельных антибиотиков на микроорганизмы молока. Сделан вывод, что скорость размножения различных микроорганизмов в молоке неодинакова и зависит, главным образом, от температуры хранения и культивирования МКБ.

There were studied the peculiarities of influencing penicillin (PN) and laevomycetin (LV) no microorganisms of milk and its chemical composition., as well as on pure cultures of commercial strain of lactic acid bacteria (LAB) Streptococcus salivarius subsp. thermophilus (LAB1) and Lactobacillus delbrueckii subsp. bulgaricus (LAB2). PN was introduced into experimental samples (ES) of milk in concentrations of 0.002; 0.004; 0.008 and 0.016 mg/kg, and LV - 0.00015; 0.0003; 0.0006; 0.0012 mg/kg. The antibiotics were not brought into control samples (CS) milk was stored and fermented at temperatures of 24 and 37 deg. C. The overall microbial number (OMN) was determined in CS and ES, as well as the time of achieving electrical impedance (the medium resistance level corresponding to the start of stationary phase of microbial population development). In the process of studying the physicochemical indicators of milk and starters conventional practices and modern equipment (Bentley 2000 и Somacount 300) were used. It is shown that the OMN and impedance achievement time when storing milk, as well as QMAandOAMO during its fermentation were mostly influenced by temperature, but not concentration of PN and LV. The maximum OMN value (2.5*10E6 CFU/ml) was recorded in CS at t 37 deg. C. As the concentration of PN in starter ES as compared to CS increased, the fraction of protein, lactose and dry matter grew. In starter ES LAB1 in the concentration of PN of 0.016 mg/kg, as compared to other ES the clot formation time greatly increased. In ES of LAB2 the best preservation of fat was recorded (0.66-0.72%). During metabolism of LAB1 fat in substrate diffused more intensively, its concentration in supernatants was 0.36-0.42%. So, the peculiarities of differential effect of sole antibiotics on milk microorganisms have been identified. It has been concluded that the propagation rate of different microorganisms in milk is not identical and depends mainly on the temperature of storing and cultivating LAB.
