Quality of tomato juice and tomato puree: Effect of screen size and speed of pulper-finisher

Study on the effect of screen size and speed of the pulper-finisher on quality of tomato juice and puree were conducted. Preliminary tests were done to evaluate the performance of an existing pulper-finisher with two unadjustable blades, in terms of quantity and quality of product. Quality parameters such as total solids of tomato juice and puree, pulp/serum ratio of tomato juice, particle size distribution of tomato juice, consistency index of tomato juice and puree, and yield of tomato juice were determined at different screen pore sizes (0.5, 1.0, 1.5 mm) and motor speeds (100, 300, 500, 700 rpm). A modified pulper-finisher was then fabricated with three blades and adjustable angle improvements from the existing unit. Quality evaluation of tomato juice and puree from the modified unit was then done, with color as an additional parameter. At screen size 1.0 mm and a speed of 700 rpm, maximum quality index (total solids, pulp/serum, consistency, particle size distribution) were obtained for both units. Maximum yield of tomato juice however, was obtained with screen size of 1.5 mm and a speed of 700 rpm. Furthermore, the tomato color index for juice and puree were not affected by screen size and speed of the pulper-finisher. Results of the comparative tests done on the existing and on the modified pulper-finisher show that quality and quantity of tomato juice and puree from the modified unit is better and higher. A 3 % increase in yield was observed for the modified unit.
