Kabayaki is a popular food product made from eel meat, dipped is sauce, broiled and steamed. It is considered to be a delicious luxury food. Its nutritive value was recognised. It is believed that eel meat can cure a lot of diseases and illness, Kabayaki has become a speciality for Japanese. More than hundred thousand tons of eels are consumped annually by Japanese, the most consumer in the world. Nowadays, eels are cultured as well as imported to meet local demand.
