Recovery test of cyclamate inpreserved fruits by conversion of cyclamate to N, N-dichlorocyclohexylamine and then determin ed by measuring its UV absorption. The percentage of recovery were 98.28+-0.358 and this method can be used to insist on the cyclamate determination by nitrite test which was interfered by the other additives. This method was used to determine the levels of cyclamate in 30 samples of preserved fruits which were cyclamate positive by nitrite test. However, only 80 percent of these samples were depicted to contain cyclamate at the levels 0.93-27.49 g/kg.
