Effect of Payorm wood extract (Shorea talura Roxb) on quality changes of yellow-striped crevalle (Caranx leptolepsis) fillet during ice storage

Effects of Payorm wood extract on the deterioration of the quality of yellow-striped crevalle fillets during ice storage were investigated. Payorm wood extract exhibited antioxidant activity as indicated by a marked reduction (4.7 fold after 2 days) in TAB number of samples dipped in Payorm wood extract compared with controls. APC, TVB and TMA of fish fillets were slightly inhibited by treatment with Payorm wood extract. However, the treated fish fillets had a detectable wood odor during the first 4 days but obtained higher sensory scores after 11 days iced storage compared to controls. The extract prepared with the higher ratio of wood to water showed higher effective inhibition of microbial and chemical spoilage.
