Local vegetables in Chiang Mai

Aim of the survey of local vegetables in Chiang Mai is the basic informations for conservation of plants which are becoming rare. Local vegatables were collected from local markets and home gardens. Over 100 species were identified; the morphology of each species was described and photographed; the methods of food preparation were also recorded. Some species presented here are favorite vegetables in Chiang Mai: Aspidistra sutepensis, Azadirachta indica var. siamensis, Brousonnetia kurzii, Curcuma sessilis, Ficus virens, Gymneno inodorum, Raphanus sativus var. caudatus, Sphenoclea zeylanica etc. One species, Aspidistra sutepensis is considered to be rare which should be conserved.
