For development of milk quality and safety sold in primary school of Ubonratchathani province, the quality assurance system by checking quality in laboratory before purchasing, law enforcement and good manufacturing practice have been implemented to farmers and manufacturers by Regional Ubonratchathani Laboratory and Relevant Agencies in Ubonratchathani province. Those managements were conducted under policy and action plant of Ubonratchathanis school milk committee. 52 samples (35 UHT milk and 17 pasteurized milk) were collected to determine their quality both of chemical composition (nutritional value) and microbiological quality (safety of milk consumption). The results showed that 4 samples or 11.43 percent of UHT milk and 9 samples or 52.94 percent of pasteurized milk did not conform to the standard. The problem of UHT milk was only microbial content (TPC/ml)., whereas the problems of pasteurized milk were microbial content (TPC/ml, E. coli/0.1 ml) and chemical composition (percent Solid not fat (SNF). Percent Fat). The comparison between the results in the year 1999 and 2000 indicated that the non-conformity to the standard quality of UHT milk was decreased from 33.33 percent to 11.43 percent with statistically significant (p LT 0.05). On the contrary, the non-conformity of pasteurized milk which decreased from 66.67 percent to 52.94 percent did not change with statistically significant (p LT 0.05). Therefore this study should be more strengthened and carried on continuously next year.
