Diarrhea, typhoid and food poisoning are caused by Salmonellae and Staphylococcus aureus. The report has showed higher rate of these diseases since 2541 B.E. Due to contamination in pork products and higher domestic demand of pork consumption: therefore, it is necessary to get data for improving Production sanitation for consumer safety. Samut Songkhram Regional Medical Sciences Center and the Slaughter house in Rajchaburi Province have made a microbiological survey of enteric bacteria and Staphylococcus aureus in swine carcass from the slaughter house in Rajchaburi Province. There are 220 samples analyzed during April to June 2542 B.E., using standard conventional technique. It was found that 110 pork samples were contaminated with Coliform bacteria, Escherichia coli, Staphylococcus aureus and Salmonellae 100 percent, 37.3 percent, 56.4 percent and 51.8 percent, respectively. For other 110 samples of swine small intestine, it was found that contaminated with Coliform bacteria, E. coli, S. aureus and Salmonellae 100 percent, 31.8 percent, 30.0 percent and 33.6 percent, respectively.
