Moisture adsorption isotherms of tarhana

In this study, moisture adsorption isotherms of tarhana were determined at 25 and 35 deg C and as the temperature increased, the decrease in the adsorbed moisture content was observed at water activity between 0.2 and 0.9. This case was explanied by possible changes in adsorption mechanism that occured in water-water and water-adsorbent interactions by increasing temperature, and by the difference of relative contributions of both interactions to water adsorption. Isosteric heats that accompanied water adsorption, and free energy values were calculated by using modified Clausius-Clapeyron equation and Chung and Pfost equation respectively
