The situation of animal products consumption and consumer preferences among intern students at the Ankara University Faculty of Veterinary Medicine | Ankara Üniversitesi Veteriner Fakültesi intern öğrencilerinde hayvansal ürünlerin tüketim durumu ve tüketici tercihleri

This research has been made in order to exhibit the consumption of animal products by and the preferences of the intern students training at the Ankara University Faculty of Veterinary Medicine and to determine the factors affecting the consumption habits of the students regarding these products. A survey has been carried out over 122 students who were the material of the research conducted in the education period of 2006-2007. The analysis of the obtained data was made through SPSS for Windows 11.5 software. As a result of the research, the followings were found out; 67.1 % of the students spent less than 200 YTL for their monthly food consumption. The ratio of those who never consume beef 4.1%; mutton 42.6% and goat meat is 92.6%. Those who consume white meat types of 1 kg and more in a month are 60.6% for chicken meat, 10.7% for fish meat and 2.4% for turkey meat and other poultry meat. On the other hand, there are the following findings in this study: 8.2% of the students never consume milk as a drink, only 18.0% consume more than 20 eggs monthly, the main factors they consider while buying red meat and white meat are hygiene, quality, brand and price. Drinking milk and red meat are purchased from the supermarkets by 95.1% and 83.7% respectively. Besides, 54.1% of the students prefer minced meat among the red meat types and 47.5% prefer brisket among chicken meat types.

Bu araştırma, Ankara Üniversitesi Veteriner Fakültesinde öğrenim gören intern öğrencilerin hayvansal ürün tüketim durumu ve tercihlerinin ortaya konması ve bu ürünler bakımından öğrencilerin tüketim alışkanlıkları üzerine etkili faktörlerin belirlenmesi amacıyla yapılmıştır. 2006-2007 eğitim-öğretim yılı içerisinde yapılan çalışmanın materyalini, toplam 122 öğrenci ile gerçekleştirilen anketten elde edilen veriler oluşturmuştur. Elde edilen verilerin analizinde SPSS for Windows 11.5 programından yararlanılmıştır. Araştırma sonucunda, öğrencilerin %67.1'inin bireysel aylık gıda tüketimi için 200 YTL'nin altında bir harcamada bulunduğu, kırmızı et türlerini hiç tüketmeyenlerin oranının sığır etinde %4.1; koyun etinde %42.6 ve keçi etinde %92.6 olduğu, aylık olarak türlere göre 1 kg ve üzerinde beyaz et tüketiminde bulunanların oranının, tavuk etinde %60.6; balık etinde %10.7; hindi ve diğer kanatlı etlerinde ise %2.4 olduğu belirlenmiştir. Diğer taraftan bu çalışmada, öğrencilerden %8.2'sinin içme sütü tüketim alışkanlığının hiç olmadığı; %18.0'inin aylık olarak 20'den daha fazla yumurta tüketiminde bulunduğu; kırmızı et ve beyaz et satın alırken dikkate alınan başlıca faktörlerin sırasıyla hijyen, kalite, marka ve fiyat olduğu; öğrencilerin içme sütü ve kırmızı eti sırasıyla %95.1 ve %83.7'lik oranlarla süpermarketlerden satın almayı seçtiği; bunun yanı sıra öğrencilerin kırmızı et ürünlerinden %54.1'lik oran ile ilk sırada kıymayı, beyaz et ürünlerinden ise %47.5'lik oran ile ilk sırada tavuk göğüs etini tüketmeyi tercih ettiği tespit edilmiştir.
