English. The highest protein content was taken from Dumas analysis method. Besides, Harmankaya had the lowest protein content, while Dagdas and Altay cultivars had the highest protein contents in all protein analysis methods. NIR analysis method was revealed as safe, fast and chipest method, and it could be used scientific studies and flour industry.
