Identification of several proteins from various barley samples by the proteomic method based on combination of gel electrophoresis, MALDI-TOF mass spectrometry, and bioinformatics is an important tool for proteome analysis of barley. It can be successfully applied to the identification of malting barley varieties. The mass spectrometry-based strategy designed for protein identification exhibits good sensitivity and rapid protein identification in comparison to other methods. The identified proteins were ribulose biphosphate carboxylase from barley leaves and beta-amylase and aldose-reductase from barley grains.
