A brief compendium of electrical properties of soil, irrigation water as well as different agricultural and food products is presented in this paper. Electrical conductivity may be used for determination of cell membrane properties, soil salinity, frost sensitiveness, chilling and freezing tolerance, moisture content, seed germination, pest control, mechanical stress, efficiency of pasteurization, maturity of fruits, freshness of eggs, food contamination, and other properties of grains, seeds, meat, sugar, milk, wood, soil, or irrigation water. Different techniques of permittivity measurement are mentioned and classified.
