Technological measures for increasing the value of relative extract in Velke Brezno brewery

The aim of our experiments was to evaluate the effect of new malting procedures aiming at improving the values of relative extract of the malt. The new technology was tested in the brewery Velke Brezno, Czech Republic, during the 2005/2006 campaign. In comparison with the old technology, the new one used higher degree of steeping, higher intensity of aeration during both germination and steeping, and longer germination period. These changes led to the increase of relative extract values.
