The concentrations of alpha- and beta-bitter acids in hops harvested in the Czech Republic in 2011 were evaluated in samples from three growing areas as follows: Zatec (73.8 % of the hop yard areas in the Czech Republic), Ustek (12.5 %) and Trsice (13.6 %). The Saaz variety was cultivated on 87.2 % of the areas, the Sladek variety on 5.2 %, Premiant variety on 5.5 % and the Agnus variety on 2.7 % of the areas. The hops were analyzed in accordance with the Analytica-EBC method 7.7 (HPLC) and all results are given in weight % in dry matter. The average value for alpha-acids in the Saaz variety in the Czech Republic was 3.0 % (in the Zatec area 3.1 %, in the Ustek area 3.1 % and in the Trsice area 2.5 %). The conc. of beta-acids was 5.1 %. The conc. of alpha-acids was 0.9 % lower in comparison with the year 2009 and 0.6 % lower when compared with the average of the last 17 years. The conc. of beta-acids was 0.3 % higher in comparison with the year 2009 and also with the long-term average. The average conc. of alpha-acids in the Sladek variety in the Czech Republic was 7.3 % and the conc. of beta-acids was 6.4 %. The conc. of alpha-acids was in agreement with the harvest in 2009 and 0.6 % higher than the average of the last 6 years. The conc. of alpha-acids in the Premiant variety was 9.7 % and the conc. of beta-acids was 6.8 %. The conc. of alpha-acids was 1.4 % lower than in 2009 and approximately the same when compared with the average of the last 6 years. The conc. of alpha-acids in the Agnus variety was 11.2 % and the conc. of beta-acids was 7.3 %. The conc. of alpha-acids was 2.4 % lower than in 2009.
