Mashes from rye or triticale were prepared by means of enzymatic preparations of the firm NOVO Nordisk: Termamyl 120 L, BAN 240 L, SAN Super 240 L and Ultraflo L. In the course of experiments the level of saccharification and yield of ethanol after fermentation by Saccharomyces cerevisiae were determined. The highest yield of ethanol was attained for standard triticale mashes. Comparable value was obtained for rye mashes treated with Ultraflo L. Preparation Ultraflo L also considerably reduced viscosity of mashes. In the second part of our work slops were treated with Rhodotorula glutinis yeasts. It was proved that subsequent cultivation reduced viscosity of stillage. Simultaneously stillage was enriched with protein and, in addition, amino acid composition was more suitable for feeding purposes.
