[Apple fruit ripening: biochemical aspects and hypotheses of initiation]

Review is about various aspects of apple fruit ripening: the peace of this process in plant ontogenesis, chemical changes in it, its relation with respiration, and also existing nowadays hypotheses of initiation and passage. The special attention is paid to ethylene role in fruit ripening. Besides with the known hypotheses of ripening outset explained by the action of so-called "effect of a tree" a hypothesis is being considered which is based on the decisive influence of lipoxygenase enzyme on the start of ethylene formation
