Activation of Ferulic Acid in Rice Bran by Extrusion and Polysaccharidase Treatment

Ferulic acid, strong antioxidant present in walls of rice bran, exists in inactive state from physiological viewpoint, because it is covalently crosslinked with other insoluble cell wall components. Ferulic acid was activated using extrusion process and enzyme treatment. When extrusion and enzyme treatment were used in combination, ferulic acid was released up to 82%, and antioxidant activity of rice bran increased approximately 23 times compared with that of raw bran.
