A Managerial Evaluation of Small-Scale Food Processing Business in Rural Area

The main objective of this study is to diagnose management of rural small food processing businesses seeking for their developing strategies in the future. Evaluation indicators are largely divided into five parts such as basic management part, personnel management part, production management part, sales management part, and financial management part. Important outcomes are as follows : 1) Total number of rural small food processing enterprises was 546 in 2006 and totally 50 samples were selected to survey by region and main products. 2) Following indicators were evaluated as "inadequate" on the whole and necessary to improve. - managerial ability such as business mind. project planning and vision in basic part. - welfare system for laborers as incentive, bonus, wage difference and inspiring event in personnel management. - environmental management of working area, management of raw materials and packing materials, maintenance and management of equipments, process and quality management, sanitary management of workers in production management part. - sales promotion and PR, and after service on customers in sales management part. - normal book-keeping and accounting management, cost accounting and statistics management in financial management part. 3) In this regard, the strategies to activate management are recommended as follows. - to provide educational program for enhancement of business mind and managerial ability and proper field counselling directly. - to improve overall production line through supporting incubating doctor, consulting by specialists and necessary funds. - to provide educational program on sales promotion, and regional events and new opportunities for increasing sales amount in sales management part. - to develop manual of proper book-keeping and continuous field guidance in financial management part. 4) First of all, it is essential to cultivate successors against aged society through supporting settlement fund, exemption from military service, etc. At the same time, it is necessary to make easy to participate in rural small scale processing businesses of domestic agricultural products by simplifying procedure.
