Biochemical, nutritional and microbiological quality of ice stored Notopteruschitala brought from other states and sold in the Imphal market, Manipurwas studied over a three month period (Dec, 1994 to Feb., 1995). Thepercentage of total protein, lipid and ash values were 82.08, 6.51 and 4.01 ondry weight basis. Moisture content was 78.80 %. Non protein nitrogen (NPN),total volatile base nitrogen (TVBN), free fatty acid (FFA), thiobarbituric acid(TEA) number and pH values were 2.14 %, 14.00 mg %, 6.35 % as oleic acid,0.62 mg malonaldehyde/1000 g and 6.40 respectively. Digestibility, biologicalvalue (BV) and protein efficiency ratio (PER) of casein and A^. chitala were86.62 vs. 84.31 %, 92.82 vs. 91.55 % and 2.44 vs. 2.46 respectively. There wasno significant difference in PER, BV and digestibility values (p>0.05) betweencasein and A^. chitala diets. The total plate count of bacteria (TPC g V cm'^ ofskin) was between IC-IO', the highest being in gill and skin and the lowestin muscle. Coliform, Staphylococcus aureus, faecal Streptococci were detectedwhile E. coli and Salmonella were not detected. Eight genera of bacteria andfour of fungi were identified.
