The paper gives characteristics of functional and technological properties of collagen preparations recovered from pig skins using acid-enzyme method. The basic aspects taken into account during assessment of the material obtained was its suitability from meat processing and non-food applications. Two preparations containing hydrolytic enzymes from the culture of Yarrowia lipolytica yeasts with varied carbon source in the medium were used for isolation of collagen fibres from the experimental raw material, giving two types of fibres (WY sub(O) and WY sub(G)). For comparison, collagen fibres were also isolated with the use of pepsin (W sub(P))
