The objective of the study was to assess the practical application of acoustic emission method to investigate the spring and winter varieties of wheat grains. The uniaxial compression tests were carried out using a ZWICK Universal Testing Machine, single grains were compressed with a speed of 10 mm/min. At the same time, while compressing the material, emitted sounds were recorded within a frequency range from 0.1 to 15 kHz. A high dispersion of acoustic descriptors values was found. The spring varieties of wheat were characterized by a lower number of events and a lower acoustic energy than the winter varieties. Each of the varieties investigated had a specific, individual spectrum. The acoustic emission method can be applied to investigate the grain, but, then it is indispensable to take very many measurements
