This paper analyses consumption demand for olive oil, seed oil and butter in Italy during the period 1967-85. After testing the hypothesis that fats are a group which is weakly separable from other foods, we estimate an almost ideal demand system for the three goods. Both the conditional elasticities and those adjusted for first stage effects are discussed.
