The effect of different cultural conditions (pH, temperature, SO(,2) and acetaldehyde concentration in the substrate) on the growth and enzymatic synthesis of some malo-lactic microorganisms was studied. The species Leuconostoc oenos, Pediococus cerevisiae and Lactobacillus casei var. alactosus were considered. The effect of various conditions assayed differed with the different types of microorganism, always more considerably on L. oenos.
Show more [+] Less [-]ITALIANO: E stato preso in esame l'effetto di diverse condizioni colturali (pH, temperatura, impiego di dosi crescenti di SO(,2) e acetaldeide) su sviluppo e sintesi enzimatica di alcuni microrganismi malolattici, appartenenti alle specie Leuconostoc oenos, Pediococcus cerevisiae e Lactobacillus casei var. alactosus. L'influenza dei parametri saggiati e risultata differente nei confronti delle diverse specie considerate ed in tutti i casi particolarmente marcata per L. oenos.
